- 1 kg chicken boneless
- 3 tbs soya sauce
- 6 tbs vinegar
- 4 tbs sugar
- 1 tsp chilli powder
- to taste Salt
- 1/2 tsp Black pepper powder
- For skewer:
- 2 tbs oil
- 1 medium onion
- 1 Green capsicum
- 1-2 medium tomatoes
- For skewer sauce:
- 5 tbs chilli sauce
- 5 tbs BBQ sauce
- For gravy :
- 4 tbs oil
- 2 tsp garlic paste
- 6-7 chunks chopped
- 2 cups tomato puree
- 4 tbs ketchup
- 2 tbs chilli sauce
- 2 tbs soya sauce
- 2 tbs Worcestershire sauce
- 1 tsp mustard paste
- 1/2 Green capsicum chopped
- For rice :
- 4 cups rice
- Water as required
- 1 tbs salt
- 2 tsp vinegar
- 4-5 boiled eggs
Instructions to make to make Chicken shashlik.
- Pound the boneless chicken.. cut into 1 inch cubes...now add chicken in a bowl... add marinated ingredients and mix well, marinate in refrigerator for almost half an hour...
- Take chunks and mince using knife as fine as u can.... set aside...
- Skewer sauce : In a separate bowl, mix chilli sauce and BBQ sauce and keep aside...
- Gravy: In a pan add oil and saute garlic paste until fragrant.... do not let it brown... Now add minced chicken and cook on medium to high flame until chicken is cooked... Add tomato puree,chilli sauce,ketchup, soy sauce and Worcestershire sauce...add enough water to make the gravy consistency to your liking.. preferably thick consistency..Now add chopped capsicum.. bring the sauce to boil and after 1 -2 minutes, turn off the heat. Capsicum should not be soft..
- Skewer preparation: peel a medium sized onion and cut into 1 inch cubes, same size as the chicken...Remove seeds from the green capsicum and cut into 1 inch chunks... cut tomatoes into 1 inch cubes.. Take marinated chicken out of the refrigerator and skewer the chicken and vegetables alternatively.. Grill the skewers on high heat.Once the skewers are ready,using a brush,glaze them with the mixture of chilli sauce and BBQ sauce. Toss and turn them in the pan 1-2 times and take out on plate
- Repeat process for the remaining skewers...Fry the remaining vegetables with the remaining marinade on high flame to maintain the crunch...
- In a pot add water and salt vinegar.... bring it to boil... now add rice and bring it to boil....
- Cut eggs into 2 parts...
- Assembly: Dish out the rice on a big plate.... pour the gravy on the rice.. arrange skewers on the gravy... decorate with some boiled eggs....
- Chicken shashlik is ready... serve hot and enjoy....
