- 1 kg chicken
- 2 tbsp crushed ginger
- 2 tbsp crushed garlic
- 2 tbsp coarsely grind green chilli
- 2 onion finely chopped
- 1.5 tbsp fennel seeds
- 1/4 cup fried onion
- 2 tsp red Chilli powder
- 1 tsp homemade biryani masala
- 1/4 cup curd
- 1 big tomato finely chopped
- 10-12 green chillies
- as required 2green cardamom,1black cardamom, 7-8 pepper corn,2 cloves
- as required 1 inch cinnamon,1 piece mace,2bay leaves,1tsp caraway seeds
- 1/2 tsp orange food colour
- 1 tsp Kewra water and juice of one lemon
- as per taste Salt
- 1/2 cup oil
Instructions to make to make Quick Chicken Biryani
- First rinse the rice well and soaked into water for 1/2 an hour.wash the chicken well and in a vessel add 3cups of water add 1/4 tsp orange food colour and 1.5 tsp salt.mix well and put on the fire when water is started Boilig put the chicken piece into this water and give one boil to it.turn off the flame and immediately strain out the chicken pieces and keep in another plate
- Meanwhile take another vessel add soaked rice,add 7-8 glass of water,cinnamon, lemon's peel, cardamom,cumin seeds,and bay leaves.add salt as per taste.add green chillies and let's boil the water. When it boiling turn the flame medium when the rice has 80% cooked remove from the flame and strain the water.keep aside.remove the lemons peel from rice.
- Take a heavy bottom vessel add oil heat it add whole spices saute few seconds then add chopped onion.saute until they turn golden add crushed ginger garlic and saute for a minute.then add ground green Chilli,fennel seeds and chopped tomatoes.add 1 tsp salt or as per taste and red Chilli powder.mix and cook on medium flame until the tomato turn soft.
- Turn the flame slow and add curd mix well.cook for 2 minutes and add the chicken.mix very well with spices add little water.cover and cook for 8-10 minutes on medium flame.the chicken has cooked now add biryani masala mix and cook for a minute.turn off the flame.
- Now take the vessel in which biryani has cooked.make a layer of rice add some fried onion. add chicken pieces.spread evenly.add a layer of rice.sprinkle some fried onions evenly.then add chicken's layer.repeat the same third time.and on the top layer of rice sprinkle the remaining fried onion.in a cup add 2 tbsp of water and 1/4 tsp orange food colour. Mix well and spread this colour on the rice.add lemon juice and kewra water.cover and cooked on simmer for 7-8 minutes.turn off the flame.
- After ten minutes open it.mix gently and serve the delicious aromatic biryani with raita and salad
